• 2  Dressed Crabs
  • 200ml Mayonnaise
  • 1 Shallot (finely chopped)
  • 2 teaspoon Dijon Mustard
  • 1 tablespoon Tomato Puree
  • 25g Fresh Tarragon (finely chopped)
  • Tobasco Sauce
  • 2 Baby Gem Lettuce
  • 1 tablespoon Tarragon Dressing
  • Salt and Pepper

Serves 4 people

To Serve:

Lemon Wedges and Brown Bread of your choice.



Crab cocktail has been out of fashion for a while now, but i still think it makes an easy a quick starter for any party and makes the dressed crab go further instead of using one per person.

First mix the mayonnaise with the shallots, mustard, tomato puree and tarragon, a few shakes of Tobasco to taste and salt and pepper.

Take the crab meat out of the shells and stir in 3/4 of the mayonnaise mixture.  Taste and add more if you think it needs it.

Just before serving, shred the lettuce leaves and toss with the dressing (use a simple vinaigrette if not the Peets Tarragon Dressing) , divide between your plates or glasses and divide the mixture between the plates and top with the crab mayonnaise.  Serve with Lemon Wedges and Brown Bread of your choice or Toasted.

Alternative Seafood: Lobster (Just replace the 2 crabs with 1 cooked Lobster for that special treat)
