These meaty swordfish steaks pack a lot of flavour, so don’t be scared of cooking swordfish with stronger flavours such as garlic, chilli or ginger. Try it chargrilled or pan-fried – but despite being a relatively oily fish, be sure to brush it with oil before cooking to retain the moisture.
