Directions for pan roasting.
- Ideally season the monk fish 30 mins before cooking to dry out some of the water content
- Preheat the oven to 220oC (Gas 7).
- Preheat an oven-proof pan until it is hot.
- Place the seasoned monk fish in your pan, and allow it to sear for approximately 2 minutes. Flip the tail over, and allow the uncooked side to sear for another 2 minutes.
- Add a knob of butter and baste the fish.
- Place in an oven-proof pan, inside your heated oven, and allow them to bake for approximately 8 – 12 mins or until done (firm to touch).
